Clay Town Center Announces New Restaurants Under Development

Clay Town Center is thrilled to announce the construction of two restaurants in the growing development. The new additions, Anejo Cocina Mexicana and Kairos Jax, promise to bring innovative and delectable dining to local and international food lovers alike.

Anejo Cocina Mexicana will specialize in modern interpretations of classic Mexican dishes, as well as unique cocktails from the full bar. The 4,800-square-foot casual restaurant will seat 175 patrons, and features 1,000 square feet of outdoor patio seating. 

Kairos Jax will offer a wide variety of smoothies, juices, coffee and tea, as well as breakfast and lunch items. The restaurant will have a seating capacity of 75, with a 2,400-square-foot dining room and 441-square-foot outdoor patio.

Both restaurants are locally owned and operated. Anejo Cocina Mexicana is part of the Salsas Restaurant Group, which operates 45 restaurants in Northeast and Central Florida. Kairos Jax is operated by Martha Morales and Raul Lujano.

Construction of these two new restaurants will begin in September 2023 as part of Clay Town Center’s Phase III, with grand openings slated for September 2024. The two new restaurants will occupy one of the three buildings planned for the retail/restaurant portion of the development, which will feature more restaurants and service businesses.

“The introduction of these two distinctive restaurants reflects our commitment to enhance Clay Town Center’s dining scene and add value to the community,” said Rick Friedman of Paradigm Development Partners, developer of Clay Town Center. “Both Anejo Cocina Mexicana and Kairos Jax will bring much-needed dining options for local residents and out-of-town visitors.”

Both restaurants will be built in partnership with Paradigm Development Partners, engineering firm Kimley-Horn and architect Roy Williams, with the general contractor to be chosen via bid process. The two restaurants are expected to add more than 40 job opportunities to the local community.
